Full of skin-loving nutrients, Donna Hay’s raw caramel cookies are bursting with omega-3s and vitamin E
from both hemp and sunflower seeds. On top of being super delicious, you can also up the goodness with the
addition of GLOW or COLLAGEN from The Beauty Chef,
putting these tasty, quick-to-whip-up treats into the all-good, no-guilt zone.
DONNA HAY’S RAW CARAMEL COOKIES
⅓ cup (55g) sunflower seeds
⅓ cup (55g) pepitas (pumpkin seeds)
2 tablespoons hemp seeds (optional)
⅓ cup (40g) coconut flour
12 soft fresh dates (240g), pitted
½ cup (125g) cashew, almond or peanut butter

2 teaspoons vanilla extract
Finely crushed pistachios, crushed freeze-dried raspberries or crushed cacao nibs, for sprinkling*
Line a large tray with non-stick baking paper.
Place the sunflower seeds, pepitas, hemp seeds, flour, dates, cashew butter, GLOW or COLLAGEN and vanilla in a food
processor and process until a dough forms.
Roll 1-tablespoon portions of the mixture into balls and flatten slightly. Place on the tray, and press the
tops into pistachios, freeze-dried raspberries or cacao nibs and refrigerate for 1 hour or until firm.
